Healthy Meat Loaf Recipe

Meat Loaf, traditionally made with ground beef or a mix of ground beef, pork and veal, is often too high in fat and sodium to be considered healthy.

However, this recipe is using healthier ingredients and lots of fresh vegies making it a great, tasty dish for the entire family. A balance of protein, good carbs and fat, one slice will deliver good energy and a punch of nutrients. I love this dish because it helps me be prepared and organised during the weeknights. Enjoy and remember to eat for energy and nourishment!


  • 500g of lean minced chicken meat
  • 500g of minced turkey meat
  • 1 bunch of silver beet, lightly steamed and chopped
  • 2 big capsicum  chopped (1 red and one yellow)
  • 2 medium carrots grated
  • 1 red onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 eggs, beaten
  • 1 bunch of dill, chopped
  • chia seeds gel (3 table spoons of chia seeds + 20 spoons of water)
  • 3 tablespoons olive oil


Heat oven to 170°C.

Place a sauté pan over medium high heat.  Once is hot, add the oil and immediately after add the onion, garlic, capsicum, and carrot. Sauté lightly until softened and let it cool.

In a big bowl mix the ground chicken & turkey, add the chia gel, eggs, salt & pepper. Add the sauté mixture, the chopped silver beet and the chopped dill.

Mix everything well and place in two oblong cake forms.Bake for 50min to 60min (the mixture will shrink slightly and the top will be golden-brown).
